Meatballs

I don’t feel like I have cooked in a year, so working out the cobwebs. First up are some yummy meatballs. One batch makes about 40 balls. We freeze them, and pull them out as we want them. They are great to feed hungry men, aka Caleb… we do meatball sandwiches, spaghetti and meatballs, and straight up meatballs (especially when fresh)! Yum!

2 lbs. lean ground beef

1 c. cracker crumbs (Progresso Italian Style)

2 eggs, beaten

1 c. onion, finely chopped

4 T. milk

1/2 tsp. no-salt seasoning

1 tsp. oregano

1 tsp. salt

1/2 tsp. pepper

1. Combine ingredients in bowl.

2. Form into walnut-size balls. Place on baking sheet, bake @ 350 degrees for 20 minutes.

3. Drain grease from baking sheet, and package in freezer bags.
